Ingredients - 2 lb. lean ground beef
- 1 1/2 t. liquid smoke
- 1/8 t. garlic powder
- 1/2 c. onion powder
- 1 c. water
- 1 t. whole black pepper
- 1 t. mustard seed
- 3 t. Morton's Tender Quick Meat Cure
Directions
Mix all ingredients together except meat. Add meat and mix well. Shape into 2 rolls. Wrap in foil with shiny side next to meat. Prick with fork about 4 times. Refigerate 24 hr. Bake at 325 degrees for 2 1/4 hr. with pricked side down on rack with pan beneath so it will drain while cooking. Unwrap and let cool. Rewrap and refigerate or freeze. I usually double the recipe to make 4 loaves of beefstick at a time. |
