Ingredients - 1 Tbsp. + 1 tsp. Olive Oil
- 1/2 tsp. Basil Leaves
- 2 minced Garlic Cloves
- 1/4 tsp. Salt and Pepper
- 1 cup sliced Mushrooms
- 1/2 cup chopped Onion
- 4 oz. shredded Monterey or Jack Cheese, divided
- 1/2 cup diced Red Bell Pepper
- 2 cups thinly sliced Zucchini
- 4 eggs
Directions
In 12-inch skillet, heat 1 Tbsp. oil, saute onion and garlic until onion is transparent. Add zucchini, mushrooms, red pepper and seasonings, stirring constantly. Saute until vegetables are tender crisp, (about 5 min.) remove from heat. In medium bowl beat eggs, add 2 oz. cheese and vegetables. Stir to combine. Grease an 8x8 inch baking dish with remaining 1 tsp. oil. Transfer vegetable mixture to dish. Sprinkle with remaining 2 oz. cheese. Bake at 400 degrees for 25-30 min. until puffy and browned and a knife inserted come out clean.
